Cattle have been worked on Avenales Ranch land since the 1870s. The current beef program grew out of a family effort to recreate the flavor of an older style of beef: pasture-raised on the ranch and dry-aged 27 days. In the ranch's own words the beef is "organically raised, sustainable, GAP-4 certified, grassfed and grass finished, and 27 day dry-aged," and the ranch is now Audubon Certified as well.
What began as one steer a year for the family opened to friends in 2018 and now runs as a waiting-list program, with beef offered several times a year in whole (about 400 pounds finished), half, or quarter shares; prices are given on inquiry. The ranch ships anywhere in California for a flat $50. Avenales also produces estate wine.
